15 May 2015

Happy Friday Friends!

Today, we’re sharing: Oversized Chocolate Chip Cookies and a secret: Teenage boys like a lot of the same things that they did when they were just tots; but, parents, here’s the secret: they can now do almost everything on their own!

These are so simple to make but their fun factor is huge! Baking is such a creative activity.

I’ve often shared baking with small kids but, I do have a teenager son, too, who’s full of so many great suggestions + creativity. I’m learning, first hand: fill the kids thoughts with room for creative thinking from a small age and it come back to you in such interesting, dynamic, ways.

To make Giant Chocolate Chip Cookies:

Ingredients:

1 cup (8 oz.) butter, at room temperature | 226 grams or 2 1/3 dl
1 1/2 cups (12 oz) brown sugar | 300 grams or 3 1/2 dl
1/2 cup (4 oz) white sugar | 1 dl or 112 grams
2 large eggs, at room temperature
1 Tbsp. pure vanilla extract
2 3/4 cup all-purpose flour | 6 1/2 dl or 560 grams
1 tsp. baking soda
1 tsp cinnamon
1/2 tsp. salt
2 cups chopped High quality Chocolate | 200 grams or 4 dl

Instructions:

Preheat oven to 350 degrees F | 180 C

Cream butter. Add the sugars and beat with electric mixes for 5 minutes on high speed. Add the eggs, one at a time, beating for another minute after each addition then, add the vanilla, mixing well.

In a separate bowl, combine the dry ingredients and mix. Add these dry ingredients to the creamed mixture slowly and until well incorporated. Stir in the chocolate chips.

Line baking sheet with baking paper.

Form the dough into one large cookie and bake for approximately 20 minutes. I like or rotate by baking sheet in the oven while baking for uniform baking.

Transfer to cooling rack.

Enjoy!

Full disclosure: The above cookie actually is no longer original sized. It’s now about 1/2 it’s original after sharing with the family. I wish I had taken a picture when it was whole. There’s actually a face on the cookie, too!

Yesterday, I was really glad to learn that our son’s friends check out willowday (too cool);but, then, I also learned that I had more to learn: they’re looking for ideas, too and looking for ideas that include our son! I’ve never had a conversation on teenage creativity here. I can feel like: is it too personal but, I realised after yesterday that there are definitely some conversation to have and ideas to exchange. So, “hello teenagers” from time to time, too! Today’s oversized cookies are baking for any age but, talking teenagers: this is a perfect project for them! (Or Mom’s make these as a cookie cake, if you’re looking for something new.)Every household has it’s own food philosophy and I’ll add parenting philosophy. I believe creativity leads to such great places, spaces and ideas— and shows itself in unexpected ways, it you give it room.

Since the kids are very active, we’re an active family, and I’ve filled the house with healthy food philosophy and routines from the day they were born, I’m not afraid of a little sugar, now and again. In fact, I love to bake for a crowd and family and also, love baking for kids (and big ones, too.) (here | here| here) and more here.

This had me thinking of that sand-box conversation: kids and computers: Yesterday, while our son was over at a friends house, they weren’t on the computer playing game, instead 3 teenage boys baked — by choice. I know this family has the same approach to the kitchen but, I mention boys just because teenage boys get talked about more than others in terms of “what to do with a teenager?” Bake! Turn the kitchen over to them. I think if you give the kids a lot of ideas and places for their creativity from a young age, computers are not an issue because there’s just so much to do!

If yours are anything like ours: they’re hungry, have boundless energy and ideas. I loved the stream of pictures I was getting yesterday as this baking progressed — creativity, inaction and fun but, using technology to communicate rather than entertain them. I find that if I allow a little room for rule changing, independence and humour: teenagers aren’t so very secretive at all: why not make a cookie bigger that measures bigger than one foot?

We wish you a wonderful weekend! The theme of my will continue: 14 year old boy but, sporty boys. I’m sailing off to accompany this son’s team for the weekend to Finland — sleeping in inflatable mattresses in a school + all! (I could use an assistant here at willowday and due to this will wait until next week with some projects and happenings that we’re so excited about!

I can’t wait to meet you next week.

Willowday Wishes!
