It’s been great meeting you back here again after a long Summer! With the kids back to school, I’ve been baking muffins every morning this week! I’m actually not one who jumps out of bed bright eyed and bushy tailed but, I do so love the early morning and a house with cinnamon aromas.

Bake your A-B-C muffins, too,  and start writing!

To pull this feat off, I realized that if I measured the dry ingredients out the night before and organized the bowls and utensils, too, I could mix and make muffins in a snap in the morning with a great, classic recipe from my Mom — tried and true — Mother’s recipes always work. The luxury of the luscious scent of baking apples or peaches felt like the perfect balance to our new pre-6AM alarms and traffic ahead.

As things often develop around here, after a batch of apple and peach muffins (or pumpkin, here)  
in classic muffin tin forms, I started to think about what fun it could be to surprise the kids with a morning message or their names or… to surprise them and their friends with after school packages of their initials and these “Alphabet Muffins” were born! These Alphabet muffins are here to stay.
Our youngest proclaimed that he would have been reading “a lot” if I had made them when he was teeny. I realized, too, that these are the opposite of the calorie laden mega-muffin;  one fruit alphabet muffin must be less than 1/3 of a normal muffin so portions can really be healthy — even when they spell words like C-A-T… just don’t be out-foxed if they want to spell supercalifragilisticexpialidocious! Whether these Alphabet Muffins are for back to school, an afternoon project with reading perks, a party or just because, continue below for the recipe! Alphabet Muffins
Pre-heat oven to 350 F

2 c. Flour
2 t. Baking Powder
1/2 t Cinnamon
1/4 t. Salt
1/4 t Baking Soda
2 Apples, quartered and cored with peel if organic and chemical free (I’ve used pears and peaches, too)
3/4 C Brown Sugar
1/3 C Oil
2/3 C. Milk
1/4 cup Nuts, optional

Topping: 
1/4 C. Sugar

2 T Cinnamon

Let’s get started: 

– Mix the dry ingredients and set aside.
– In a food processor or blender, combine the apples, brown sugar, oil, and milk. Puree.
– Add nuts
– Stir these wet ingredients in with the dry until just combined.

– Clip a 1″ opening at the end of a pastry cone.

– Fill the cone with 1/2 of the batter and pipe the alphabet.
– This recipe will make one complete alphabet, if letters are 3 ” tall.

– Sprinkle with the Sugar Topping.
– Bake 8-10 minutes.
– These muffins should be moist but firm.
– Remove from the oven and cool on a cooling rack.
