Ice Cream Sandwich Cake

Just say the word, cake: Cake.  Doesn’t that make you happy? Now think,  Ice Cream Sandwich and Cake?

Ice Cream Sandwich Cake Recipe

Ingredients:
1/2 cup unsalted butter, melted
1/2 cup sugar
1 large egg
1 teaspoon pure vanilla extract
1/2 teaspoon salt
1/2 cup all-purpose flour
1/4 cup unsweetened cocoa
3 pints of ice cream
Sprinkles

Directions:
Preheat oven to 350. Butter a 15-by-10-inch jelly-roll pan; line with baking paper leaving some paper over lapping the edges.
– Whisk together butter and sugar until combined; add beaten egg, vanilla, and salt until well combined.
– Add flour and cocoa: mix just until smooth.
– Spread in prepared baking pan and divide the batter into 2 halves by marking the middle with a knife.
– Bake until cake is dry to the touch but be careful not to over baked; approximately 10 to 12 minutes.  It is very important not to over bake the cake.
– Cool completely in pan.
– Using the paper overhang, lift cake halves onto a work surface.
– Place one half of cake, flat side down, on a large piece of plastic wrap.
– Spread the ice cream onto the cake bottom, working quickly.
– Once the ice cream is in place, top it with the other piece of cake.
– Now, turn the cake on it’s side and cover all of the sides with sprinkles. You will need to work quickly. I have applied the sprinkles both by shaking the sprinkles to cover the full outside and I have also filled a shallow pan with deep sprinkles and have dipped the edges into the sprinkles to cover. This is a matter of personal preference. I’ll also add that if the sprinkles aren’t perfected at this point, don’t worry. Freeze the cake and add more sprinkles at the time of serving to even out any areas in need of covering.
– Return the ice cream sandwich to the baking pan, wrap tightly in plastic and freeze until firm, about 2 hours.
– When it’s time for your part, unwrap the ice cream, place on cake plate, top with cake topper and serve.

Candy Cake Topper:
Materials: candy necklace, scissors, 2 wood skewers, candy letters
To make a Candy Cake Topper:
– Cut the wood skewers to desired length.
– Score the ends of the skewer with a kitchen knife so that you will be able to thread the elastic into this slits to hold the garland into place.
– Cut the candies loose from the elastic necklace but save the necklace to use to string the candy cake topper.
– Thread the candies and washi flags onto the banner in desired pattern or wording.
– Attach to wooden skewers by first making a knot at the end of the elastic and then, by threading the elastic into the slit.
– Stretch the banner to desired length and repeat the same process of knotting and attaching at the other end.
– Top the cake with the cake topper.

Nothing is more popular in our house than ice cream. I find this to  be true with a lot of kids. In fact, my own kids don’t like frosting and that was what led me to this idea.  It’s such a wonderful twist on the classic, Ice Cream Bars. It’s like a mega sized  Ice Cream Bar.
